Prepare the Glass

Chill a rocks glass by filling it with ice water. Set aside.

Muddle the Sugar

In a separate mixing glass, muddle the sugar cube with a few dashes of Peychaud's bitters until the sugar is dissolved.

Add Rye

Pour in the rye whiskey and add ice to the mixing glass. Stir well until chilled.

Prepare the Glass Again

Discard the ice water from the chilled rocks glass and rinse it with Herbsaint or absinthe, swirling it around to coat the inside. Discard any excess.

Strain and Garnish

Strain the rye mixture into the prepared glass. Express the lemon peel over the drink and then drop it in as a garnish.
