Wagyu Bavette

French Fries

Method

Wagyu Bavette

1

Marinate the Steak

In a bowl, mix olive oil, salt, and black pepper. Rub this marinade onto the wagyu bavette steak and let it marinate for at least 30 minutes.

2

Grill the Steak

Preheat the grill to high heat. Place the marinated steak on the grill and cook for about 6-8 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

Chimichurri Sauce

3

Prepare Chimichurri

In a food processor, combine parsley, oregano, garlic, red wine vinegar, olive oil, red chili flakes, and salt. Blend until well combined but still chunky. Set aside.

French Fries

4

Prepare and Fry Potatoes

Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels and sprinkle with salt.

Aioli

5

Make Aioli

In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Stir until well mixed. Adjust seasoning to taste.
