Prepare the Oysters
Rinse the oysters under cold water and pat them dry with paper towels.
Make the Batter
In a bowl, combine the cornmeal, all-purpose flour, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk.
Coat the Oysters
Dip each oyster into the buttermilk mixture, then dredge them in the cornmeal mixture, ensuring they are fully coated.
Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Oysters
Carefully add the coated oysters to the hot oil in batches. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Serve
Serve the fried oysters hot with cole slaw and hot sauce on the side.
