Set up assembly station with warmed tortillas, lime wedges, queso fresco, pickled onions, microgreens, and toasted seeds so guests can assemble tacos in sequence.

Toast/Prepare Chapulines
If using dried chapulines, toast in a dry skillet over medium heat 2–3 minutes until fragrant. If using pre-toasted, briefly reheat 1 minute. Remove and set aside.

Add lime juice, sea salt, and chopped cilantro. Toss off heat and taste; adjust salt or lime as needed. Keep warm for assembly.
Ant Salsa (Escamoles Accent)

Prepare tomato: roast the roma tomato over an open flame, under a broiler, or in a hot skillet until charred on all sides. Let cool, then finely chop (or pulse once in a food processor).

Fold in the toasted edible ants. Taste and adjust seasoning. The ants add crunchy, citrusy notes — keep this salsa bright and slightly chunky for texture contrast.

Add escamoles and gently sauté 3–4 minutes, stirring carefully — escamoles are delicate; you want them heated through and slightly firmed but not mashed. Season with salt, pepper, and lime juice.

Assemble tacos omakase-style: offer tortillas warm and let each taco feature one principal insect element or a composed bite. Suggested builds:

2) Escamoles taco: place a spoonful of warm escamoles in tortilla, top with a few grains of toasted pepitas or sesame, a light sprinkle of queso fresco, and a small leaf of epazote or cilantro.

3) Ant salsa accent taco: spread a little ant salsa on the tortilla, add a few toasted chapulines for crunch, crumble queso fresco, and finish with microgreens and lime.
