Prep bread and spread
Lightly toast the 4 slices of sourdough bread in a toaster or under a broiler until just golden (1–2 minutes). Spread mayonnaise evenly on two slices and mix the Dijon mustard into the remaining mayo and spread on the other two slices, creating a mild tang on both halves.

Prepare tomato and mozzarella
Slice the ripe tomato into 1/4-inch thick rounds (about 6–8 slices). Pat tomato slices dry with paper towel. Slice the fresh mozzarella into 1/4-inch rounds and pat dry to avoid excess moisture.

Season tomato and mozzarella
Arrange tomato slices on two bread slices over the mayo. Sprinkle the 1 tsp salt and 1/4 tsp of the black pepper evenly over the tomatoes. Place mozzarella slices on top of the tomatoes. Drizzle 1 tsp of extra-virgin olive oil and the 1 tsp balsamic glaze over the mozzarella and tomatoes for brightness.

Add basil, prosciutto and greens
Tear the 12 basil leaves and scatter them over the cheese. Fold or layer the 6 prosciutto slices atop the basil. On the other two bread slices (those with Dijon-mixed mayo), evenly distribute the 1 cup arugula. Drizzle the arugula with the remaining 1/2 tbs olive oil and sprinkle the remaining 1/4 tsp black pepper.

Assemble sandwich
Close the sandwich by placing the arugula-topped bread halves onto the cheese/prosciutto halves, mayo sides facing in. Press gently to compact layers.

Grill (optional)
Heat a nonstick skillet or panini press over medium heat. Spread 1 tablespoon of softened butter (or brush 1/2 tbs olive oil) on the outside of each sandwich slice. Place sandwich in the pan and cook 2–3 minutes per side until bread is golden and the mozzarella softens slightly. If using a panini press, grill 3–4 minutes until golden and slightly pressed.

Finish and serve
Remove sandwich from heat and let rest 1 minute. Cut each sandwich diagonally into halves to make 4 triangles. Serve immediately with an optional extra drizzle of balsamic glaze and a few whole basil leaves for garnish.
