Pickled Blueberries

    Prepare quick pickles first so flavors develop while you cook other components. In a small saucepan combine apple cider vinegar, water, sugar and salt. Bring to a gentle simmer over medium heat, stirring until sugar dissolves.

    Place blueberries, thyme sprig and peppercorns in a small heatproof jar or bowl. Pour the hot pickling liquid over the blueberries to cover. Let cool to room temperature, then cover and refrigerate for at least 30 minutes (preferably 1 hour). Keep chilled until plating.

Crushed Carrot

    Cook carrots

    Place carrots in a medium saucepan and cover with cold salted water (about 1 inch above carrots). Bring to a simmer and cook until very tender when pierced with a fork, about 12–15 minutes depending on size. Drain well.

    Crush and finish

    Return hot carrots to the pan or place in a bowl. Add butter, honey (or maple), orange zest, lemon juice, and olive oil. Use a potato masher or fork to gently crush the carrots to a rustic, slightly chunky texture (not completely puréed). Season with the listed 3 tsp kosher salt and 1/2 tsp black pepper, tasting and adjusting to balance sweetness and seasoning. Keep warm; cover lightly.

Sautéed Kale

    Heat 1 tablespoon olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook 20–30 seconds until fragrant but not browned.

    Add chopped kale, season with 3/4 tsp kosher salt, and sauté, tossing, until wilted and tender, about 4–6 minutes. Finish with 1/2 teaspoon lemon juice, toss, and keep warm.

Duck

    Score the skin of duck breasts in a crosshatch pattern being careful not to cut into the meat. Pat the breasts very dry with paper towels. Season both sides with 1.5 tsp kosher salt and 1 tsp freshly ground black pepper, pressing the seasoning into the meat.

    Place a large cold skillet (preferably cast iron) over medium-low heat. Place the duck breasts skin-side down in the pan (no oil initially if the pan is well seasoned) and cook gently to render fat, 8–12 minutes, pressing occasionally to ensure even contact. If the pan seems dry or the skin begins to stick, add up to 1 tablespoon neutral oil.

    When skin is deeply golden and most fat has rendered, flip the breasts and increase heat to medium. Cook the flesh side 3–5 minutes for medium-rare (internal temp 130–135°F / 54–57°C) or longer for more doneness. Baste with pan fat for extra flavor.

    Transfer duck to a cutting board, tent loosely with foil, and rest 6–8 minutes before slicing thinly on the bias. Reserve pan fat for optional sauce.

Finish & Plate

    If using a pan sauce: pour off all but 1 tablespoon duck fat from the skillet, return to medium heat, add 1/4 cup duck jus or a splash of stock and scrape browned bits, reduce briefly until slightly thickened, taste and season. Alternatively, use a spoon to drizzle some rendered fat over the sliced duck for richness.

    Plate by spreading a portion of the crushed carrot to one side, mound a serving of sautéed kale beside it, and fan sliced duck breast over or next to the carrot. Spoon pickled blueberries and some of their pickling liquid atop or alongside the duck (only a few berries per plate for brightness). Drizzle reserved sauce or a little pan fat over the duck, and finish with microgreens or parsley.

    Serve immediately while duck and vegetables are warm.
