Prepare the Fish
Season the fresh fish fillets with salt, black pepper, and lemon juice. Let it marinate for about 15 minutes.

Sauté Onions
While the fish is marinating, slice the onion into thin rings. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 5-7 minutes.

Cook the Fish
In the same skillet, add another tablespoon of olive oil. Once hot, place the marinated fish fillets in the skillet. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Assemble the Sandwich
On the bottom half of each sandwich roll, place the cooked fish fillet, top it with sautéed onions, and then add a slice of American cheese. Place the top half of the roll on the sandwich.

Fry the Potatoes
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the dried potato strips in batches and fry until golden brown and crispy, about 4-5 minutes per batch. Remove fries and drain on paper towels.
