Method

For the Halibut

    Prepare the Halibut

    Pat the halibut fillets dry with paper towels. Season both sides with salt and black pepper.

    Sear the Halibut

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the halibut fillets and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and keep warm.

For the Thyme Butter Sauce

    Make the Sauce

    In the same skillet used for the halibut, reduce the heat to medium. Add the unsalted butter and allow it to melt. Add minced garlic and fresh thyme, stirring for about 1-2 minutes until fragrant.

    Finish the Sauce

    Stir in the lemon juice and cook for another minute. Remove from heat and set aside.

For the Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the russet potatoes into evenly sized chunks. Place them in a large pot and cover with cold water.

    Cook the Potatoes

    Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook for about 15-20 minutes or until tender. Drain and return to the pot.

    Mash the Potatoes

    Add milk, unsalted butter, salt, and black pepper to the potatoes. Mash until smooth and creamy.

For the Fresh Vegetables

    Prepare the Asparagus

    Trim the tough ends off the asparagus. In a skillet, heat olive oil over medium heat. Add the asparagus and sprinkle with salt.

    Cook the Asparagus

    Sauté for about 5-7 minutes until tender and bright green. Remove from heat.
