Crust Preparation
- 1
Make the crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.
- 2
Form the crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Make sure it is evenly distributed.
- 3
Bake the crust
Preheat the oven to 350°F (175°C) and bake the crust for 8-10 minutes, until lightly golden. Remove from the oven and let it cool.
Filling Preparation
- 4
Prepare the filling
In a large bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, key lime zest, and egg yolks until smooth and well combined.
- 5
Fill the crust
Pour the filling mixture into the cooled graham cracker crust, smoothing the top with a spatula.
- 6
Bake the filling
Bake the filled pie in the oven at 350°F (175°C) for 10-12 minutes, until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature.
Topping Preparation
- 7
Make the whipped cream
In a medium bowl, using a hand mixer, whip the heavy cream and powdered sugar together until stiff peaks form.
- 8
Top the pie
Spread the whipped cream over the cooled pie filling, smoothing it out to the edges. Garnish with key lime slices.
- 9
Chill and serve
Refrigerate the pie for at least 2 hours to allow it to set properly before slicing and serving.
