Preparation of Ingredients

    Prepare the Blackening Spice

    In a small bowl, mix together paprika, garlic powder, onion powder, cayenne pepper, dried thyme, salt, and black pepper.

    Season the Mahi Mahi

    Rub the blackening spice mixture all over both sides of the mahi mahi fillets and set aside.

    Prepare the Shrimp

    Season the shrimp with a pinch of salt and set aside.

    Prepare the Vegetables

    Wash and chop the fresh vegetables into bite-sized pieces.

Cooking

    Cook the Mahi Mahi

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the mahi mahi fillets and cook for about 3-4 minutes on each side until blackened and cooked through. Remove from skillet and keep warm.

    Grill the Shrimp

    In the same skillet, add another tablespoon of olive oil and the butter. Once melted, add the seasoned shrimp and cook for about 2-3 minutes until pink and opaque. Remove from heat.

    Heat the Lobster Cream Sauce

    In a small saucepan, gently heat the lobster cream sauce over low heat until warmed through.

    Cook the Vegetables

    In the same skillet used for the shrimp, add the fresh vegetables and sauté for about 3-5 minutes until tender-crisp.

Serving

    Plate the Dish

    On each plate, place a generous scoop of mashed potatoes, top with the blackened mahi mahi, then add the grilled shrimp. Drizzle the lobster cream sauce over the top and serve the sautéed vegetables on the side.
