Preparing the Shrimp

Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels.

Set Up Breading Stations
In three separate shallow dishes, place the flour mixed with salt, pepper, and paprika in the first, beaten eggs in the second, and a mixture of breadcrumbs and shredded coconut in the third.

Bread the Shrimp
Dredge each shrimp first in the flour, then dip it into the eggs, and finally coat it with the breadcrumb and coconut mixture. Press gently to ensure the coating sticks.
Cooking the Shrimp

Heat Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully place the breaded shrimp in the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.

Drain the Shrimp
Once cooked, transfer the shrimp to a plate lined with paper towels to drain excess oil.

Cut the Potatoes
Slice the russet potatoes into thin strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Heat Oil
In a large deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Carefully add the fries to the hot oil in batches, frying for 4-5 minutes or until golden and crispy.
