Preparing the Fish

Prep the Cod
Rinse the cod fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.
Making the Beer Batter

Combine Batter Ingredients
In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the beer while stirring to create a smooth batter. Beat the egg in a separate bowl and fold it into the batter until combined.
Making Tartar Sauce

Mix the Sauce
In a small bowl, combine the mayonnaise, finely chopped dill pickles, lemon juice, capers, and fresh dill. Mix well and season with salt and black pepper to taste. Refrigerate until ready to serve.

Frying the Fish

Heat Oil and Fry Fish
In the same oil used for frying the fries, heat it to 350°F (175°C). Dip each seasoned cod fillet into the beer batter, allowing excess to drip off, then carefully place it in the hot oil. Fry for about 4-6 minutes or until golden brown and cooked through. Remove and place on paper towels to drain.
