Preparation of Ribs

Prepare the Ribs
Remove the membrane from the back of the pork ribs for better flavor absorption.

Marinate the Ribs
In a bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, and apple cider vinegar. Rub this marinade all over the ribs, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the Smoker
Preheat your hickory smoker to 225°F (107°C).

Smoke the Ribs
Place the marinated ribs in the smoker and smoke for 4-5 hours, or until the meat is tender and has pulled back from the bones.

During the last 30 minutes of smoking, glaze the ribs with BBQ sauce to create a sticky coating.
