Prepare the Chicken
Cut the chicken breasts into strips about 1 inch wide.

Bread the Chicken
Dip each chicken strip first in the flour, then in the beaten eggs, and finally coat with the breadcrumb mixture. Set aside on a plate.

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Chicken
Carefully place the breaded chicken strips in the hot oil, frying in batches if necessary. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
French Fries

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin strips for fries.

Heat the Oil
In a deep fryer or a large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

In a small bowl, combine honey, Dijon mustard, and mayonnaise. Stir until smooth and well blended.
