Method

Chicken and Bacon Preparation

  1. 1

    Grilling the Chicken

Preheat your grill to medium-high heat. Brush the chicken breasts with olive oil and season with salt and black pepper. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from grill and let it rest.

  2. 2

    Cooking the Bacon

While the chicken is grilling, cook the bacon in a skillet over medium heat until crispy. This should take about 5-7 minutes. Remove from skillet and place on paper towels to drain excess fat.

Balsamic Red Onion Preparation

  1. 3

    Pickling the Onion

Slice the red onion thinly and place it in a small bowl. In a separate bowl, combine balsamic vinegar and sugar, stirring until the sugar dissolves. Pour the mixture over the onions and let them marinate while preparing the rest of the sandwich (about 10-15 minutes).

Caesar Mayo Preparation

  1. 4

    Making the Caesar Mayo

In a small bowl, mix together mayonnaise, parmesan cheese, garlic powder, and lemon juice until well combined. Set aside.

Assembly

  1. 5

    Building the Sandwich

On a slice of sandwich bread, spread a generous amount of the Caesar mayo. Layer with grilled chicken, crispy bacon, romaine lettuce, balsamic red onions, and a parmesan crisp. Top with another slice of bread. Repeat for the remaining sandwiches.

  2. 6

    Serving the Sandwich

Cut the sandwiches in half if desired and serve immediately, enjoying the combination of flavors!
