Preparing the Chili

Cook the Bison
Add the ground bison to the pot. Cook until browned, breaking it apart with a spoon, about 7-8 minutes.

Add Beans and Tomatoes
Stir in the black beans and canned diced tomatoes (with their juice). Mix well.

Incorporate Beef Broth
Pour in the beef broth and stir to combine. Bring the mixture to a simmer.
Seasoning the Chili

Add Spice Blend
In a small bowl, combine the chili powder, cumin, paprika, salt, black pepper, oregano, and cayenne pepper. Sprinkle the spice blend over the chili and stir well.

Simmer
Reduce heat to low and let the chili simmer uncovered for 30-40 minutes, stirring occasionally. This allows the flavors to meld together.
Serving the Chili

Prepare Toppings
While the chili simmers, chop the green onions and grate the pepper jack cheese.

Ladle the chili into bowls and top each serving with chopped green onions and a generous amount of pepper jack cheese.
