Prepare the Bison Patties
In a mixing bowl, combine the ground bison, salt, and black pepper. Mix gently and form into two equal-sized patties.

Cook the Patties
Preheat a skillet over medium-high heat. Cook the bison patties for about 4-5 minutes on each side or until they reach your desired doneness.

Add Cheese
In the last minute of cooking, place a slice of white cheddar cheese on top of each patty and cover the skillet to melt the cheese.

Assemble the Burger
On the bottom half of the burger bun, layer the lettuce, followed by the cooked bison patty with melted cheese, sliced tomato, and the top half of the bun.

Soak Onions
Slice the onion into thin rings and soak them in buttermilk for at least 30 minutes.

Prepare the Breading
In a bowl, mix together the all-purpose flour, cornstarch, paprika, and salt.

Drain the onions from the buttermilk and toss them in the flour mixture until well coated.
