Ingredients
Grains
Hops

Priming Sugar (for bottling)
Mashing
1. Mash the Grains
Heat 5 gallons of water to 165°F (74°C) and add the crushed pale malt, crystal malt, and carapils malt to create the mash.
2. Hold Temperature
Maintain the mash temperature at 152°F (67°C) for 60 minutes. Stir occasionally.
3. Sparging
After the mash, sparge with enough water to collect about 6 gallons of wort.
Boiling
4. Boil the Wort
Bring the collected wort to a vigorous boil.
5. Add Hops
At the beginning of the boil, add 1 oz of Citra hops. After 30 minutes, add 1 oz of Mosaic hops and 1 oz of Simcoe hops. Finally, at 10 minutes left, add 0.5 oz of Amarillo hops.
6. Cool the Wort
After the boil, cool the wort quickly to 70°F (21°C) using a wort chiller or ice bath.
Fermentation
7. Transfer to Fermenter
Transfer the cooled wort to a sanitized fermenter and pitch the American ale yeast.
8. Ferment
Seal the fermenter and allow the beer to ferment at 68°F (20°C) for 1-2 weeks, or until fermentation is complete.
Bottling
9. Prepare Priming Sugar
Boil 3 oz of corn sugar in 2 cups of water for 5 minutes, then cool.
10. Bottle the Beer
Add the cooled priming sugar solution to the fermenter, then bottle the beer using sanitized bottles and caps.
11. Carbonate
Store the bottles at room temperature for 1-2 weeks to carbonate.
