Method
Fried Chicken Directions
Marinate
In a large bowl, combine the buttermilk and chicken pieces. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Flour Mixture
In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
Dredge the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, shaking off excess flour.
Fry the Chicken
In a large skillet or deep fryer, heat vegetable oil over medium-high heat. Fry the chicken pieces for about 15-18 minutes, turning occasionally until golden brown and cooked through. Drain on paper towels.
Collard Greens Directions
Cook Collard Greens
Add the chopped collard greens and chicken broth to the pot. Season with salt and black pepper. Cover and simmer for about 30-45 minutes until greens are tender.
Cornbread Directions
Mix Dry Ingredients
In a bowl, combine cornmeal, flour, baking powder, sugar, and salt.
Combine and Bake
Pour the wet mixture into the dry ingredients and stir until just combined. Pour into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.
