Method
Cooking the Redfish
Prepare the Redfish
In a bowl, drizzle olive oil over the redfish fillets, then season with salt, black pepper, and garlic powder. Let it sit for 15 minutes.
Cook the Redfish
Heat a grill pan or skillet over medium-high heat. Cook the seasoned redfish fillets for about 4-5 minutes on each side or until cooked through.
Making the Salsa Matcha
Prepare the Chiles
Remove the stems and seeds from the dried guajillo chiles and soak them in hot water for about 15 minutes.
Blend the Salsa
In a blender, combine the soaked chiles, olive oil, garlic cloves, tomato, lime juice, and salt. Blend until smooth.
Making the Avocado Crema
Blend the Crema
In a blender, combine the ripe avocado, sour cream, lime juice, and salt. Blend until smooth and creamy.
Plating
Serve
Serve the grilled redfish topped with salsa matcha and a drizzle of avocado crema. Enjoy!
