Grilled Italian Sausage

    Prepare sausages

    Pat the sausages dry with paper towels. Lightly brush each sausage with 1 tbs olive oil and sprinkle evenly with garlic powder, dried oregano, kosher salt, and black pepper so the seasonings adhere.

    Preheat grill or skillet

    Heat an outdoor grill to medium-high (about 400°F / 200°C) or a heavy skillet or grill pan over medium-high heat. If using a grill, oil the grates or brush the sausages with a bit more oil to prevent sticking.

    Grill sausages

    Place sausages on the grill or in the hot skillet. Cook for 12–16 minutes, turning every 3–4 minutes so they brown evenly and develop grill marks. Internal temperature should reach 160°F (71°C) for pork sausages (or 165°F / 74°C for poultry sausages). If sausages begin to char too quickly, move to a cooler part of the grill or reduce heat and continue cooking until done.

    Rest and serve

    Remove sausages from heat and let rest on a plate for 3–5 minutes to redistribute juices. Serve whole or split on a bias; squeeze a lemon wedge over each sausage just before serving.

Lentil Bean Salad

    Cook lentils

    Place the rinsed lentils in a medium saucepan with 3 cups water or low-sodium vegetable broth. Bring to a boil, then reduce to a simmer and cook uncovered for 18–22 minutes until lentils are tender but hold their shape. Drain any excess liquid and transfer lentils to a large bowl to cool slightly.

    Prepare vegetables and herbs

    While lentils cook, halve the cherry tomatoes, dice the cucumber, finely dice the red onion, and chop parsley and mint (if using). Add the rinsed and drained cannellini beans to the bowl with the lentils.

    Make dressing

    In a small bowl or jar whisk together extra-virgin olive oil (3 tbs), red wine vinegar (2 tbs), Dijon mustard (1 tsp), honey or maple syrup (1 tsp), smoked paprika (1/2 tsp), salt (3/4 tsp), and black pepper (1/2 tsp) until emulsified.

    Assemble salad

    Add the cherry tomatoes, cucumber, red onion, chopped parsley, chopped mint (if using), and cannellini beans to the warm lentils. Pour the dressing over the lentil mixture and toss gently to combine so the warm lentils absorb the dressing flavors.

    Adjust and finish

    Taste and adjust seasoning with additional salt, pepper, or vinegar as needed. If using, fold in crumbled feta or shaved Parmesan just before serving. Let the salad sit at room temperature for 10–15 minutes to meld flavors or chill for up to 2 hours in the refrigerator; bring back to room temperature before serving if chilled.

    Serve the grilled Italian sausages alongside or on top of a generous scoop of lentil bean salad. Garnish with additional parsley and lemon wedges.
