Preheat and slice
Preheat oven to 375°F (190°C). Trim ends of the baguette and slice on a slight diagonal into 12–14 pieces about 1/3 inch (8 mm) thick.

Brush and season
Arrange slices on a baking sheet in a single layer. Brush both sides lightly with the 2 tbs olive oil. Sprinkle the tops evenly with 1 tsp sea salt and 1/4 tsp freshly ground black pepper.

Toast
Bake in the preheated oven 8–10 minutes, turning once halfway, until edges are golden and centers are just crisp. Remove and cool slightly so they stay crisp but are warm for assembly.

Prepare brie
Reduce oven temperature to 350°F (175°C). Place the 8 oz wheel of brie on a small parchment-lined baking sheet or in a small ovenproof dish. If desired, trim a thin slice off the top rind to expose a bit of cheese (optional).

Bake the brie
Bake the brie in the 350°F (175°C) oven 12–15 minutes until the center is soft and the top is glossy but the shape holds. Remove from oven and let rest 2 minutes so it is easier to transfer to a serving platter.

Toast and caramelize nuts
While brie bakes, heat 1 tbs unsalted butter in a small skillet over medium heat. Add the 1/2 cup roughly chopped mixed nuts and toast, stirring frequently, 2–3 minutes until fragrant and starting to brown. Stir in 1 tbs honey and 1/4 tsp fine sea salt, cook another 30–45 seconds until the honey glazes the nuts. Transfer to a small bowl and let cool slightly; nuts will crisp as they cool.

Assembly & Finish

Assemble crostini
Place the warm toasted crostini on a serving platter. For each crostini: top with a small piece of prosciutto (folded), then place a thin slice of baked brie (use a small knife or spoon to spread some melted cheese), sprinkle a few of the honey-glazed nuts on top, and finish with a light drizzle of the additional 1 tbs honey.
