Marinate shrimp

Pat shrimp dry with paper towels. In a bowl combine 2 tbsp lime juice, 1 tbsp olive oil, 1 tsp chili powder, 1 tsp smoked paprika, 1 tsp ground cumin, 2 minced garlic cloves, 1 tsp kosher salt and 1/2 tsp black pepper. Add shrimp and toss to coat. Let marinate 10–15 minutes (no longer than 30 minutes).

Cook shrimp

Heat a large skillet over medium-high heat. Add a light drizzle of oil or a quick spray. When hot, add shrimp in a single layer and cook 1.5–2 minutes per side until pink and opaque and edges are slightly charred. Remove shrimp to a plate and keep warm.

Sauté peppers and onions

While shrimp marinates (or immediately after cooking shrimp), heat 1 tbsp olive oil in the same skillet over medium-high heat. Add sliced red and green bell peppers and sliced yellow onion. Season with 1/2 tsp salt and 1/4 tsp black pepper. Cook, stirring occasionally, 6–8 minutes until softened and edges are lightly charred. Taste and adjust seasoning. Remove from heat.

Creamy Lime Sauce

Make sauce

In a small bowl whisk together 1/2 cup Greek yogurt (or sour cream), 2 tbsp mayonnaise, 1 tsp lime zest, 1 tbsp lime juice, 1/2 tsp minced chipotle in adobo (optional) and 1/4 tsp salt. Taste and adjust lime or salt as desired. Refrigerate until ready to assemble.

Warm tortillas

Warm each flour tortilla for 10–15 seconds per side in a dry skillet over medium heat or wrap stack in foil and heat at 300°F (150°C) for 8–10 minutes. This prevents tearing when rolling.

Assemble wraps

Lay a warm tortilla on a plate. Spread about 1.5–2 tbsp creamy lime sauce down the center. Place a small handful (about 1/2 cup) shredded lettuce, a quarter of the sautéed peppers and onions (about 1/3 cup), and 4–5 cooked shrimp. Sprinkle with 1/4 cup shredded cheese and 1 tbsp chopped cilantro. Squeeze a lime wedge over fillings if desired.

Roll and serve

Fold the bottom edge up over the filling, then fold in the sides and roll tightly. Repeat for remaining tortillas. Serve immediately with extra lime wedges and reserved sauce on the side.
