Prepare bread and peanut butter

If toasting, lightly butter one side of each slice or coat a skillet with cooking spray. Spread 1 1/2 tablespoons smooth peanut butter evenly on the unbuttered side of each slice so both slices have peanut butter; alternatively spread peanut butter on one slice only if preferred.

Slice banana

Peel the banana and slice into 1/4-inch thick rounds. Arrange the slices in a single even layer on top of the peanut-buttered side of one bread slice, covering most of the surface but leaving a small border.

Add cinnamon and honey

Sprinkle 1 teaspoon ground cinnamon evenly over the banana slices. If you want added sweetness and a sticky finish, drizzle 1 teaspoon honey over the bananas and cinnamon.

Assemble sandwich

Place the second peanut-buttered slice on top, peanut-butter side down, to form a sandwich. Press gently so the banana slices adhere.

Toast (optional)

If you prefer a warm, toasted sandwich: heat a skillet over medium-low heat and place the sandwich in the skillet, buttered side down. Toast 2–3 minutes per side until golden and the peanut butter softens (cover briefly with a lid for 30–60 seconds to help warming through). If using a panini press or sandwich maker, toast until golden and warmed through, about 3–5 minutes.

Slice and finish

Remove sandwich from skillet or preparation surface. Use a sharp knife to cut the sandwich diagonally or down the middle. If desired, lightly sprinkle 1/4 teaspoon extra cinnamon and a pinch of sea salt flakes over the cut sandwich to brighten flavor.
