Oatmeal Base
Measure
Measure 1 cup rolled oats and 1 3/4 cups of your chosen liquid (use milk for creamier texture or water for lighter oats).
Combine
Place the liquid and 1 tsp salt in a medium saucepan over medium heat and bring just to a simmer (small bubbles at the edges).
Cook
Add the oats to the simmering liquid, reduce heat to low, and cook uncovered, stirring occasionally, for 5–7 minutes until thickened and creamy. For firmer oats cook toward 5 minutes; for creamier oats cook toward 7–8 minutes. If the mixture becomes too thick, add up to 2 tablespoons of extra liquid and stir.
Finish Base
Remove saucepan from heat. Stir in 1 tsp butter or oil if using, and 1 tablespoon sweetener. Taste and adjust salt or sweetener as desired.
Finish & Toppings
Assemble
Spoon cooked oatmeal into a serving bowl. Sprinkle the toasted almond flakes on top. Add optional 1/2 cup fresh fruit and a dusting of 1 tsp ground cinnamon if using.
Serve
Serve warm. Offer additional milk, sweetener, or toppings at the table.
