Warm the wrap

Lightly warm the tortilla for pliability: wrap it in a damp paper towel and microwave for 15–20 seconds, or place in a dry skillet over medium heat for 10–15 seconds per side. Keep warm on a plate.

Reheat or crisp turkey bacon (if not pre-cooked)

If your turkey bacon is pre-cooked and refrigerated, warm it in a skillet over medium heat 30–60 seconds per side until heated and slightly crisp. If it is raw, cook over medium heat for 3–4 minutes per side until cooked through. Remove and set aside on a paper towel.

Assemble wrap

Place the warmed tortilla on a clean surface. Arrange the spinach (if using) in the center, then add sliced tomato. Crumble or fold the turkey bacon over the vegetables. Sprinkle shredded cheddar evenly over the center of the tortilla.

Prepare egg whites

If using separated egg whites from whole eggs, gently whisk 3 large egg whites (or measure equivalent liquid egg whites) with a pinch of salt and black pepper until slightly frothy. This will help them cook evenly.

Cook egg whites

Heat a nonstick skillet over medium-low heat and add 1 tsp olive oil or spray lightly with cooking spray. Pour the egg whites into the skillet and let them set at the edges for 10–20 seconds. With a spatula, gently stir and fold the whites, forming soft curds, cooking 1–2 minutes until they are fully set but still moist. For a firmer texture, cover the pan briefly with a lid and add 1 tsp water to create gentle steam for 15–20 seconds.

Combine eggs with fillings

Remove the cooked egg whites from heat and place them onto the center of the prepared tortilla over the spinach and cheese. The residual heat will melt the cheese slightly. Add hot sauce or salsa if desired.

Fold and finish

Fold the sides of the tortilla over the filling, then roll snugly from the bottom up to form a wrap. If you prefer a toasted exterior, place the wrapped sandwich seam-side down in a skillet over medium heat and press lightly for 30–60 seconds per side until golden and warmed through.
