Method
Pancake batter
Prepare dry ingredients
In a large mixing bowl whisk together the all-purpose flour, baking powder, baking soda, fine sea salt and granulated sugar until evenly combined.
Prepare wet ingredients
In a separate bowl whisk the eggs, then add the buttermilk, melted butter and vanilla extract. Whisk until smooth.
Combine batter
Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — a few small lumps are fine. If batter seems very thick, stir in up to 1/4 cup whole milk to reach a thick but pourable consistency (batter should fall slowly from a spoon). Let batter rest 5 minutes while you heat the pan.
Peanut butter filling & topping
If the chunky peanut butter is very stiff, place it in a small bowl with 1 tablespoon warm water or milk and stir until loosened but still thick and chunky. Taste and, if desired, stir in 1 tablespoon powdered sugar to lightly sweeten — this is optional since the peanut butter is no-sugar-added.
Divide the mixture into three even portions to layer between the pancakes and reserve a few tablespoons for finishing on top.

For three evenly sized pancakes, pour about 1/3 cup batter per pancake onto the hot griddle. Cook 2–3 minutes until bubbles form on the surface and edges look set. Gently flip and cook another 1–2 minutes until golden and cooked through. Transfer to a warm plate and repeat with remaining batter. Keep cooked pancakes loosely covered to retain heat.
Layer pancakes with peanut butter
Place the first pancake on a serving plate. Spread about one-third of the prepared chunky peanut butter mixture across the pancake in an even layer (about 3–4 tablespoons). Top with the second pancake and repeat with another third of the peanut butter. Finish with the third pancake and spread the reserved peanut butter on top.
Finish and garnish
If desired, drizzle with maple syrup, scatter toasted chopped peanuts and add banana slices or berries. Serve immediately.
