Method
Pancake Batter
Combine dry ingredients
In a medium bowl whisk together the all-purpose flour, baking powder, granulated sugar, and fine salt until evenly distributed.
Mix wet ingredients
In a separate bowl or large measuring cup whisk the whole milk, large egg, melted butter, and vanilla extract until smooth and homogenous.
Make batter
Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or whisk just until combined — small lumps are fine. Do not overmix. Let the batter rest 5 minutes to hydrate the flour and thicken slightly.
Cook pancakes
For each pancake, pour about 1/3 cup of batter onto the preheated skillet to form a 4–5-inch pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook the second side until golden brown, about 1–2 minutes more. Repeat to make 3 pancakes total, keeping finished pancakes warm on a plate covered loosely with foil or in a low oven (200°F / 95°C).
Peanut Butter Layer & Assembly
Portion peanut butter
Spoon 2 tablespoons of the all-natural chunky peanut butter onto the top of the first warm pancake and spread gently to a thin even layer. If the peanut butter is very thick, warm it briefly (10–15 seconds) in a microwave-safe bowl or jar to loosen for easier spreading.
Layer pancakes
Place the second pancake on top of the peanut-butter–topped first pancake. Spread another 2 tablespoons of chunky peanut butter over the second pancake. Top with the third pancake and spread the remaining 2 tablespoons of peanut butter on the top pancake.
Garnish (optional)
If desired, drizzle the top with a teaspoon of honey or pure maple syrup, sprinkle with coarsely chopped peanuts for extra crunch, and arrange sliced banana or berries on top or between layers.
Serve
Slice the stack if desired and serve immediately while warm. Provide extra peanut butter and syrup at the table if guests want more.
