Method
Prepare Egg Whites
Season and whisk
Pour 2 cups of egg whites into a medium bowl. Add 1 tsp kosher salt and 1 tsp freshly ground black pepper. Whisk vigorously until slightly frothy, about 30–45 seconds. This adds air so the egg whites are light when cooked.
Cook egg whites
Heat a nonstick skillet over medium-low heat and add 1 tbs olive oil or spray lightly with cooking spray. When the pan is hot, pour the whisked egg whites into the skillet, tilting to spread into an even layer about 1/4–1/2-inch thick. Cook gently, stirring slowly with a spatula or allowing to set for 2–3 minutes until edges begin to firm. If you want folded individual portions for 8 sliders, cook for 1–1.5 minutes, then using an 8-cup muffin tin or round biscuit cutter (about 2–2.5 inches) cut or portion out 8 rounds; alternatively cook in the pan and fold into 8 equal portions. Cook until egg whites are set through but still moist, about 3–4 minutes total.
Assemble Slider Components
Melt cheese
Preheat oven broiler or a toaster oven. Place the shredded reduced-fat cheddar in an even layer over the cooked egg-white portions on a baking sheet or on the skillet if oven-safe. Broil or place under the toaster oven for 30–60 seconds until cheese melts and just begins to bubble. Watch closely to avoid burning.
Toast buns
Split the 8 whole wheat slider buns and place cut sides up on the baking sheet for 30–60 seconds under the broiler (at the same time as melting cheese) until lightly toasted. Alternatively, toast in a toaster or on the skillet for 1 minute cut side down until golden.
Assemble sliders
Place a warm egg-white-and-cheese portion on the bottom half of each toasted bun. If using, add a small handful (about 1–2 teaspoons worth) of fresh spinach leaves and a thin slice of tomato to each. Top with the bun tops. Add hot sauce or ketchup to taste, if desired.
Finish and Serve
Arrange sliders on a serving platter while warm. Serve immediately. Leftover sliders can be wrapped and refrigerated up to 2 days; reheat gently in a toaster oven or covered skillet until warmed through and cheese is melted.
