Remove cheese slices from refrigerator so they can come slightly toward room temperature for easier melting (about 10 minutes). If using whole eggs, separate whites and measure 1 cup of liquid egg whites.

Lightly toast slider buns: split the 4 whole wheat slider buns and place cut sides up on a baking sheet or skillet; toast briefly (1–2 minutes) until just golden. Set aside.

Make Egg White Patties

Mix egg whites

In a small bowl, whisk together 1 cup egg whites, 2 tablespoons skim milk (or water), 1 teaspoon kosher salt, 1 teaspoon black pepper, and 1 teaspoon chopped or dried chives until combined and slightly frothy.

Cook

Heat a nonstick skillet over medium-low heat. Add 1 teaspoon olive oil or lightly coat skillet with cooking spray and spread to coat. Pour the egg-white mixture into the skillet, aiming to form one even round about the diameter of the slider buns (or pour into two smaller rounds if easier).

Let the egg whites set undisturbed over medium-low heat for 3–4 minutes, or until the edges look set and the top is beginning to firm but still slightly glossy. Cover the pan with a lid for 30–60 seconds to help finish cooking through without browning.

When egg whites are almost fully set but still slightly moist on top, reduce heat to low and place the 2 slices of reduced-fat cheddar cheese on top of the egg-white round(s). Cover again for 30–60 seconds until cheese is melted to your liking and eggs are fully cooked (no runny liquid).

Use a spatula to transfer the egg-white and melted-cheese rounds to a cutting board. If you cooked one large round, cut it into 4 equal pieces to fit each slider bun base. If you made two smaller rounds, split as needed so each bun gets one portion.

Assemble Sliders

Place a lettuce leaf (optional) on the bottom half of each toasted slider bun to provide a moisture barrier.

Top each lettuce-lined bun with a portion of the warm egg-white and melted-cheddar piece.

Brush or dot each top bun with about 1/4 teaspoon of hot sauce or mustard (use remaining to taste) and place the top bun over the egg and cheese.

Serve immediately while cheese is warm and slightly melted. If preparing ahead, keep assembled sliders wrapped and reheat briefly (about 15–20 seconds) in a microwave or 3–4 minutes in a 350°F oven.
