Prep chicken

Trim any fat from the chicken breasts. If breasts are thick, butterfly or pound to an even 1/2-inch thickness so they cook evenly.

Season

Pat chicken dry with paper towels. Rub with vegetable oil, then sprinkle garlic powder, onion powder, 3/4 tsp salt, and 1/2 tsp black pepper on both sides.

Cook

Heat a large skillet over medium-high heat. When hot, add the chicken and cook 4–5 minutes per side until golden and an instant-read thermometer registers 165°F (74°C). Reduce heat if the exterior is browning too quickly.

Make buffalo sauce

While chicken rests, melt unsalted butter in a small saucepan or microwave-safe bowl. Whisk in 1 tbsp hot sauce until smooth and combined.

Toss chicken in sauce

Slice cooked chicken into 1/2-inch strips. Place in a bowl, pour buffalo sauce over, and toss to coat evenly. Taste and add a pinch more salt if needed.

Cilantro Lime Slaw

Assemble dressing: In a medium bowl, whisk together Greek yogurt, fresh lime juice, honey, remaining 1/4 tsp salt, and 1/4 tsp black pepper until smooth.

Toss slaw: Add chopped romaine, sliced cabbage, and chopped cilantro to the dressing. Toss until vegetables are evenly coated. Adjust seasoning with extra lime or salt to taste.

Wrap & Finish

Warm tortillas: Heat a dry skillet over medium for 20–30 seconds per side or microwave each tortilla wrapped in a damp paper towel for 15–20 seconds to make them pliable.

Build wrap: Lay a warmed tortilla flat. Spread 2 tbs ranch or blue cheese dressing down the center. Place half of the cilantro lime slaw (about 1/2 to 3/4 cup), then top with half the buffalo chicken strips (about 1/2 lb), 1/4 cup shredded cheese, and optional sliced avocado and extra hot sauce if desired.

Fold and secure: Fold the two sides of the tortilla over the filling, then roll tightly from the bottom to form a wrap. If desired, toast the seam side down in a skillet over medium heat 1–2 minutes per side until golden to seal and melt the cheese.

Serve: Cut wrap in half on the bias and serve immediately with extra dressing or hot sauce on the side.
