Begin by preparing the mint infusion. Place the fresh mint leaves in a small saucepan with 1 cup of water. Bring to a boil over medium heat and then reduce to a simmer for 5 minutes. Remove from heat and let it steep for an additional 10 minutes.

While the mint is steeping, break the dark chocolate into small pieces and place it in a heat-safe bowl. Add the coconut oil to the bowl. Melt the chocolate and coconut oil together using a double boiler method or microwave in 20-second intervals, stirring in between, until fully melted and smooth.

Once the chocolate mixture is melted, strain the mint infusion into the bowl with the chocolate, discarding the mint leaves. Add the stevia or erythritol, vanilla extract, and a pinch of sea salt to the chocolate mixture. Stir well until everything is fully combined.
