Roasted sweet potato & chickpeas

Preheat oven

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Toss the cubed sweet potato and rinsed chickpeas in a bowl with 1 tablespoon olive oil, smoked paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper until evenly coated.

Spread the sweet potato and chickpeas in a single layer on the prepared baking sheet, leaving space so pieces roast rather than steam.

Roast for 20–25 minutes, stirring once halfway through, until sweet potato is tender and golden and chickpeas are slightly crisp. Remove from oven and let cool slightly.

Greens & produce

Prepare the kale by removing thick stems and tearing leaves into bite-sized pieces. Place the kale in a large mixing bowl.

Massage the kale with your hands for 1–2 minutes (no oil needed) until it softens and darkens slightly — this makes the leaves more tender and easier to eat.

Add the thinly sliced apple, halved cherry tomatoes, and pomegranate seeds to the bowl with the massaged kale.

Dressing

In a small bowl or jar, whisk together 3 tablespoons teriyaki sauce, 1 tablespoon extra-virgin olive oil, 1 teaspoon rice vinegar, 1 teaspoon honey or maple syrup, 1 teaspoon fresh lemon juice, 1/2 teaspoon minced garlic, 1/4 teaspoon black pepper, and 1/8 teaspoon red pepper flakes (if using) until emulsified.

Taste and adjust: add a little more honey if you prefer sweeter, or an extra 1/2 teaspoon rice vinegar or lemon juice if you want brighter acidity. If the dressing is very thick, thin with 1–2 teaspoons water.

Assemble salad

Add the warm roasted sweet potato and chickpeas to the bowl with the kale and fruit so some warmth wilts the greens slightly.

Pour about two-thirds of the dressing over the salad and toss gently to combine, ensuring the sweet potato and chickpeas are coated. Add more dressing to taste.

Sprinkle crumbled feta and toasted pumpkin seeds or chopped walnuts over the salad. Toss gently once more to distribute.

Serve immediately while sweet potato is still slightly warm, or chill for 15–20 minutes to serve cold. Leftovers: store dressing separately for best texture; salad will keep in an airtight container for up to 2 days in the refrigerator.
