Preparation

1

Grill the Corn

Preheat the grill to medium-high heat. Husk the corn and remove all the silk. Place the corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender. Remove from grill and let cool slightly.

2

Chop the Vegetables

While the corn is cooling, chop the red bell pepper, green bell pepper, red onion, and jalapeño pepper into small dice.

3

Cut the Corn

Once the corn is cool enough to handle, carefully cut the kernels off the cob and place them in a large mixing bowl.

Mixing

4

Combine Ingredients

Add the chopped bell peppers, red onion, and jalapeño to the bowl with the corn. In a separate small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper.

5

Add Dressing

Pour the dressing over the corn and vegetable mixture. Toss to combine well.

6

Garnish

Chop the cilantro and sprinkle it on top of the mixture before serving.
