Experience the crisp and refreshing taste of our Cataloochee White IPA, a delightful fusion of citrusy hops and smooth wheat. This vibrant brew boasts notes of zesty orange and subtle coriander, perfectly balanced with a light, effervescent body. Ideal for warm days and lively gatherings, each sip transports you to sun-drenched landscapes, making it a perfect companion for adventurous palates.

In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the Pale Malt, Wheat Malt, and Caramel Malt, stirring well. Maintain the temperature at 150°F (65°C) for 60 minutes.

Preparing the Mash

After 60 minutes, sparge the grains with hot water to collect the wort, bringing the total volume to about 5 gallons.

Sparging

Bring the wort to a boil. Once boiling, add the Citra and Cascade hops. Boil for 60 minutes, adding the lemon zest, orange zest, and coriander with 10 minutes remaining.

After the boil, cool the wort quickly using a wort chiller or an ice bath to about 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast. Seal and allow it to ferment at 68-72°F (20-22°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, bottle the beer with priming sugar. Allow the bottles to carbonate for an additional 1-2 weeks.
