Season the Brisket

Rub the brisket with salt and black pepper evenly on all sides. Allow it to sit at room temperature for about 30 minutes.

Smoke the Brisket

Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and cook for about 1.5 hours per pound, until it reaches an internal temperature of 195°F (90°C).

Cube the Brisket

Once the brisket is done, remove it from the smoker and let it rest for at least 30 minutes. Cube the brisket into 1-inch pieces.

Toss with Sauce

In a large bowl, mix BBQ sauce, apple cider vinegar, and honey. Add the cubed brisket and stir until well coated.

Return to the Smoker

Return the sauced brisket cubes to the smoker at 275°F (135°C) for an additional 1-2 hours, until the edges are caramelized and crispy.
