Olives

Medium. Ripe black fruit. White pepper. Beef jus. Slate.

In a saucepan, heat the beef jus over medium heat until warm. Add a splash of Touriga Nacional wine to enhance the flavors. Keep warm until serving.

Prepare the Beef Jus

In a skillet, heat olive oil over medium heat. Add ripe black fruits and sauté for about 5 minutes until they soften. Sprinkle with white pepper and mix well.

Sauté the Black Fruits

On a serving plate, spoon the sautéed black fruits and drizzle with warm beef jus. Garnish with fresh herbs and a pinch of slate salt to taste.

Combine & Plate

Pour a glass of Touriga Nacional wine to accompany the dish and enjoy the pairing of flavors.
