Prepare the Chicken Wings

Preheat your oven to 400°F (200°C). In a large bowl, toss the chicken wings with olive oil, salt, and black pepper until evenly coated.

Bake the Wings

Arrange the wings in a single layer on a baking sheet lined with parchment paper. Bake for 40-45 minutes, flipping halfway through, until the wings are crispy and golden brown.

Make the Garlic Ginger Gastrique

In a small saucepan, combine minced garlic, grated ginger, honey, rice vinegar, and soy sauce. Cook over medium heat, stirring frequently, until the mixture thickens slightly, about 5-7 minutes.

Pickle the Fresno Chiles

In a small bowl, combine sliced Fresno chiles with a pinch of salt and let them sit for at least 10 minutes to pickle slightly.

Combine and Serve

Once the wings are cooked, toss them in the garlic ginger gastrique until well coated. Serve the wings topped with pickled Fresno chiles and toasted sesame seeds.
