Prepare the Potatoes

Wash the California chili potatoes and cut them into quarters. Boil them in salted water for about 15-20 minutes or until tender. Drain and set aside.

Grill the Steak

Preheat the grill to high heat. Season the flat iron steak with olive oil, salt, and black pepper. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for 5 minutes before slicing.

Char the Onions

While the steak is resting, slice the onion into thick rounds. Toss them in olive oil and grill for about 3-4 minutes on each side until charred and tender.

On a plate, arrange the grilled flat iron steak slices, California chili potatoes, and charred onions. Drizzle with salsa borracha before serving.
