Fry the Tortillas

Heat vegetable oil in a large skillet over medium heat. Cut the corn tortillas into quarters and fry them in batches until they are golden and crispy. Remove and drain on paper towels. Season with salt.

Prepare the Eggs

In the same skillet, crack the eggs and fry them sunny-side up or to your preference. Season with salt.

Assemble the Chilaquiles

In a large serving dish, layer the crispy tortilla chips. Pour the guajillo chili salsa over the chips, ensuring they are well coated. Top with pickled red onion, housemade ricotta, and fried eggs.

Finish off with a sprinkle of fresh cilantro on top. Serve immediately.
