Prepare mushrooms

Clean mushrooms gently with a damp towel or brush to remove dirt. Trim stems as needed and cut larger mushrooms into roughly 1/2–3/4-inch pieces so all are similar in size for even cooking.

Heat pan

Place a large skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt and begin to foam but not brown.

Sear mushrooms

Add the mushrooms in a single layer (work in batches if necessary to avoid crowding). Let mushrooms cook, undisturbed, 3–4 minutes until they brown on one side, then stir and continue to cook another 3–4 minutes until most pieces are golden and any liquid has evaporated.

Aromatics

Reduce heat to medium. Push mushrooms to the side and add the remaining 1 tablespoon butter to the cleared space. Add minced shallots and sauté 1–2 minutes until translucent, then stir in the garlic and cook 30–45 seconds until fragrant. Mix with the mushrooms and add thyme.

Deglaze

Pour in the white wine (or vermouth) and stock to deglaze the pan, scraping up any browned bits (fond). Cook 1–2 minutes until most of the liquid reduces.

Finish

If using, stir in the heavy cream and cook 1 minute to warm and meld flavors. Taste and proceed to seasoning step.

Truffle & Seasoning

Remove skillet from heat. Drizzle the truffle oil over the warm mushrooms and toss gently to combine. If using fresh shaved truffle, fold it in now so its aroma is preserved. Add sea salt, freshly ground black pepper, and the lemon juice. Taste and adjust seasoning—add a pinch more salt or a small extra drizzle of truffle oil if desired.

Finish and garnish: Sprinkle chopped flat-leaf parsley over the mushrooms for color and brightness. Let the mushrooms rest 1–2 minutes so flavors settle.

To Serve

Serve hot spooned over toasted bread slices as a crostini or over warm polenta or risotto for an elegant main or side. For crostini: pile mushrooms onto toast, shave an extra thin layer of fresh truffle over top if available, and finish with a final tiny drizzle of truffle oil. For polenta/risotto: ladle mushrooms over the warm base and garnish with parsley.

Storage and reheating: Cool completely and refrigerate in an airtight container for up to 3 days. Reheat gently in a skillet over low heat, adding a splash of stock or cream to rejuvenate the sauce. Avoid overheating which can diminish truffle aroma.
