Rice Bites

Rinse and cook rice

Rinse the sushi rice under cold water until the water runs mostly clear (about 3–4 washes) to remove excess starch. Drain well. Combine rinsed rice and 2.25 cups water in a rice cooker or heavy pot. Cook according to rice cooker instructions or bring to a boil, then reduce to low, cover and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes.

Season rice

While rice rests, warm rice vinegar, sugar and 0.75 tsp salt in a small saucepan or microwave just until sugar dissolves. Transfer rice to a large, shallow bowl or hangiri. Gently fold vinegar mixture into rice with a wooden spatula using cutting and fanning motions to cool — do not mash. Aim for glossy, slightly sticky rice. Let rice cool to warm (not hot).

Form rice bites

Lightly oil your hands with a little neutral oil to prevent sticking. Using a small cookie scoop or a tablespoon, portion about 1.5–2 tablespoons of rice per bite (approximately 20–24 bites from this yield). Press each portion into a compact oval or round mound about 1 to 1.5 inches across. Place mounds on a tray lined with plastic wrap.

Optional sear

For a slightly crispy exterior, heat a nonstick skillet over medium-high, add 1 tbsp neutral oil, then place rice mounds seam-side down in the pan (work in batches). Press gently with a spatula and sear 1–1.5 minutes per side until golden. Transfer back to tray to cool slightly.

Spicy Tuna

Prepare tuna mixture

Very finely dice sushi-grade tuna and place in a chilled bowl. Add 4 tbsp Japanese mayonnaise, 1.5 tbsp Sriracha (adjust heat to taste), 1 tsp toasted sesame oil, 1 tsp soy sauce, 1 tsp mirin (if using), 2 tbsp chopped scallions (use mostly white for flavor), and 1 tsp toasted sesame seeds. Season with 1/4 tsp fine sea salt and 1/8 tsp black pepper. Mix gently until evenly combined and glossy. Taste and adjust heat or salt. Keep chilled until assembly.

Make extra spicy mayo (optional)

If you want extra drizzle mayo, mix 2 tbsp Japanese mayonnaise with 1 tsp Sriracha (or to taste) and a pinch of sesame oil. Transfer to a squeeze bottle or small bowl for finishing.

Finish & Serve

Top each formed rice bite with about 1 to 1.5 tablespoons of the spicy tuna mixture, pressing lightly so tuna adheres. If using nori strips, wrap a thin strip around the circumference of the rice bite before topping to help hold everything together and add texture.

Garnish each bite with a small drizzle of extra spicy Japanese mayo, a few sliced scallion greens, a sprinkle of toasted sesame seeds or furikake, and a sliver of cucumber or avocado on the side or under the tuna for freshness.

Arrange bites on a platter, add pickled ginger, microgreens and lime wedges. Serve immediately so tuna stays chilled and rice retains texture.
