Prepare the berries

Wash all berries gently under cool running water. Dry thoroughly by spreading on a clean kitchen towel or using paper towels; excess moisture will dilute the dressing and make the berries soggy.

Hull and quarter the strawberries so pieces are roughly the same size as the other berries. Leave smaller berries whole to keep texture contrast.

Place strawberries, blueberries, raspberries, and blackberries in a medium mixing bowl.

In a small bowl, whisk together the lemon juice and 2 tablespoons honey until combined. Taste and adjust sweetness as desired. Drizzle the dressing over the berries.

Tear half the mint leaves (about 6 leaves) and toss gently with the berries to distribute aroma without bruising fruit. Cover and refrigerate while you make the yogurt foam, for 10–15 minutes, to let flavors meld.

If using gelatin (stabilized foam)

Sprinkle 1 teaspoon gelatin over 1 tablespoon cold water in a small ramekin. Let bloom 3–5 minutes. Warm briefly (10–15 seconds) in the microwave or over a bain-marie until dissolved but not boiling. Let cool slightly.

In a tall container or mixing bowl, combine 1 cup full-fat Greek yogurt, 60 ml cold milk, 1 teaspoon lemon zest, 2 teaspoons honey, and 1 teaspoon vanilla extract. If you prepared gelatin, whisk it into this mixture until fully incorporated.

Using an immersion blender (preferred) or a whisk, blend the yogurt mixture vigorously for 30–60 seconds until light, aerated and slightly foamy. The cold milk thins the yogurt enough for aeration; the foam will hold better if gelatin was used.

Taste and adjust sweetness or lemon zest. Chill briefly (5 minutes) if it warmed during blending.

If you prefer a very airy, mousselike foam, transfer the mixture to a siphon (cream whipper) charged with one N2O cartridge, and dispense directly over the plated berries just before serving. Otherwise spoon or pipe the aerated yogurt onto the berries.

Divide the dressed berries among 4 serving bowls or glasses (about 1.25 cups of berries per serving).

Top each portion with a generous dollop or quenelle of yogurt foam (about 3 tablespoons / 45 ml per serving). If using a siphon, dispense 2–3 equal bursts per serving to create a light cloud of foam.

Garnish each bowl with a small sprig of mint and, if desired, a light dusting of powdered sugar. Serve immediately so the foam keeps its volume and the berries remain fresh.
