Prepare Ingredients
Gather chilled yogurt, cold water, granulated sugar, and any optional milk or cream. If the yogurt is very thick (Greek style), have the optional milk or cream ready to adjust consistency.
Combine in Blender
Place 2 cups plain whole-milk yogurt, 1 cup cold water, and 3 tablespoons granulated sugar into a blender. Add 2 tablespoons heavy cream if you want a richer lassi. Secure the lid.
Blend Smooth
Blend on high for 30–45 seconds until the mixture is smooth and slightly frothy. Stop and scrape down the sides if needed. If the lassi is too thick for your liking, add up to 2 tablespoons milk and blend another 10–15 seconds to reach desired consistency.
Flavor & Finish
Add Aromatics
Add 1 teaspoon freshly ground cardamom powder and 1 teaspoon rose water to the blended yogurt. Pulse the blender 3–4 times (about 5–8 seconds each) to incorporate the flavors without over-aerating.
Adjust Sweetness and Chill
Taste the lassi and add more sugar if desired (add in 1/2 tablespoon increments), pulsing briefly after each addition. Add 6 ice cubes to the blender and blend 10–15 seconds until the ice is crushed and the lassi is chilled and frothy. Alternatively, pour over ice in glasses instead of blending the ice for a less diluted result.
Serve
Pour the sweet lassi into 4 tall glasses, dividing evenly. Garnish each serving with a sprinkle of chopped pistachios (about 1/2 teaspoon per glass) and a mint leaf if using. Optionally dust a tiny pinch of extra cardamom on top.
Storage
Serve immediately for best froth and chill. Leftover lassi can be refrigerated in a covered container for up to 24 hours; stir or re-blend briefly before serving as it may separate.
