Prepare and combine

If using egg white, start with a dry shake: add 60 ml Lyre's Amaretto, 15 ml fresh lemon juice, 7.5 ml simple syrup, 2 dashes Angostura bitters and the egg white to a cocktail shaker (no ice).

Dry shake (if using egg white)

Seal the shaker and shake vigorously for 12–15 seconds to emulsify the egg white and create a silky foam.

Wet shake

Open the shaker, add 6 ice cubes, reseal and shake hard for 12–15 seconds until the outside of the shaker is cold and slightly frosted. If not using egg white, combine ingredients with ice and shake for 12–15 seconds.

Strain

Double strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne and fine mesh strainer to remove ice shards and any coagulated egg bits.

Garnish & finish

Express the oils of a lemon twist over the surface of the drink and drop the twist in or lay it on the rim.

Garnish with one maraschino or brandied cherry placed in the glass.

Serve immediately. Sip and enjoy the almond‑framed, slightly bitter and citrusy profile reminiscent of classic amaretto cocktails.
