Make the Dough

In a large bowl, combine whole wheat flour and salt. Gradually add water while mixing with your hand or a spoon until a soft dough forms. Knead the dough for about 5-7 minutes until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

Divide the Dough

After resting, divide the dough into equal-sized balls (about the size of a golf ball).

Roll the Roti

On a lightly floured surface, take one dough ball and flatten it slightly. Using a rolling pin, roll it out into a circle about 6-8 inches in diameter, ensuring it is evenly thick.

Cook the Roti

Heat a skillet or tava over medium-high heat. Once hot, place the rolled roti on the skillet. Cook for about 30 seconds until small bubbles form on the surface, then flip it over. Cook for another 30 seconds, and then use a spatula to press down gently to help it puff up. Optionally, brush with ghee or oil. Flip one last time until both sides are golden brown.

Serve

Remove from the skillet and keep warm in a container lined with a clean kitchen towel. Repeat the process with the remaining dough balls. Serve hot with your choice of curry or side dishes.
