Cook rice

Rinse 1.5 cups short-grain rice under cold water until water runs mostly clear. Combine rinsed rice and 2.25 cups water in a pot with a tight-fitting lid. Bring to a boil over medium-high heat, then immediately reduce to low, cover, and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes. Fluff with fork and stir in 1 tsp butter and a pinch (about 1/4 tsp) of salt if using.

Cook noodles (if using)

Bring 6 cups water to a boil in a separate pot. Add 2 packs instant ramen noodles or rice noodles and cook per package instructions (usually 2–4 minutes for ramen, 3–5 for rice noodles) until just tender. Drain and rinse briefly under warm water to stop cooking. Toss with 1 tsp sesame oil to prevent sticking. If you prefer rice instead of noodles, reserve noodles for another meal.

Prepare chicken

Pat chicken pieces dry and season with 1/4 tsp salt and 1/8 tsp black pepper. Heat 1 tsp vegetable oil in a large nonstick or cast-iron skillet over medium-high heat. Add chicken in a single layer and sear 3–4 minutes per side until browned and cooked through (internal temp 165°F/74°C). Transfer to a plate and tent with foil.

Pan-fry tofu (optional)

If using tofu, after pressing and cubing, heat 1 tsp oil in the same skillet over medium heat. Add tofu cubes and cook without moving for 3–4 minutes to form a crust, then turn and brown all sides, about 6–8 minutes total. Season lightly with 1/8 tsp salt. Remove and keep warm.

Soft-boil eggs

Bring a small pot of water to a gentle boil. Carefully lower 2 eggs and boil 6–7 minutes for jammy yolks. Transfer to an ice bath 3 minutes, then peel. Halve and set aside for topping.

Sauce & Seasoning

Make sauce

In a small bowl whisk together 4 tbs soy sauce, 1 tbs mirin, 1 tbs rice vinegar, 1 tsp brown sugar, 2 minced garlic cloves, 1 tsp grated ginger, 1 tsp chili paste (adjust to heat preference) and 2 tsp sesame oil. Taste and adjust balance—add more soy for salt, more sugar for sweetness, or more vinegar for brightness.

Thicken sauce

Mix 1 tsp cornstarch with 1 tbs cold water to form a slurry. Heat the skillet used for proteins over medium heat, pour in the sauce and bring to a simmer. Whisk in slurry and simmer 30–60 seconds until the sauce glosses and slightly thickens. If sauce becomes too thick, thin with 1–2 tbs water. Return cooked chicken to the pan and toss to coat in the sauce for 1 minute to reheat and absorb flavor. If using tofu, add it here instead or alongside the chicken.

Vegetables & Toppings

Prep vegetables

While rice and proteins cook, julienne 1 carrot, thinly slice 3 scallions (reserve some green parts for garnish), halve 1/2 cucumber into thin half-moons, and roughly chop 3 cups baby spinach or bok choy.

Saute greens

In the skillet used earlier, add a quick splash (about 1 tsp) oil if needed and sauté the chopped spinach or bok choy over medium-high heat for 1–2 minutes until wilted. Season lightly with a pinch of salt. Remove and keep warm.

Assemble bowls

Divide cooked rice or noodles between 3 bowls (about 1/2–2/3 cup cooked rice per serving if making 3). Arrange sauced chicken and/or tofu, sautéed greens, julienned carrot, cucumber slices, and halved soft-boiled eggs on top of each bowl in sections for a balanced presentation.

Finish & garnish

Drizzle any remaining sauce over the bowls. Sprinkle toasted sesame seeds, torn nori if using, and sliced scallion greens. Add a small splash of sesame oil or sriracha to taste. Finish with a crack of black pepper.

Serving & Storage

Serve bowls hot. Leftover components (rice, cooked chicken, tofu, and sauce) can be stored separately in airtight containers in the refrigerator for up to 3–4 days. Reheat gently on the stove or in a microwave and reassemble with fresh toppings.
