Mix and portion the meat

Place ground beef in a large bowl. Add kosher salt, freshly ground black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands or a fork until ingredients are just combined — avoid compacting. Divide into 4 equal portions (about 6 oz each).

Form patties

Shape each portion into a round patty about 3/4-inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb — this prevents excessive doming while cooking.

Cook the patties

Heat a cast-iron skillet or heavy griddle over medium-high heat until very hot (about 4–5 minutes). If using a grill, preheat to medium-high. Place patties on the hot surface and cook without moving for 3 minutes. Flip and cook 2–3 minutes more for medium (adjust 1–2 minutes for desired doneness). During the last 30–45 seconds of cooking, top each patty with a slice of cheddar and cover the pan or close the grill lid to melt the cheese.

Wahlburger Sauce (copycat)

While patties rest, make the sauce. In a small bowl combine mayonnaise, ketchup, yellow mustard, dill pickle relish, Worcestershire sauce, paprika, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and taste; adjust salt, pepper or relish to preference. Cover and refrigerate until ready to use. Makes about 1/2 cup.

Prepare buns

Split brioche buns. Spread softened butter on cut sides. Toast buttered sides on the skillet or griddle over medium heat for 1–2 minutes until golden and slightly crisp. Remove and keep warm.

Slice vegetables

Thinly slice the red onion into rings and the tomato into 4 even slices. Have pickle slices and lettuce leaves ready.

Assemble burgers: spread about 1 to 1.5 tablespoons of Wahlburger sauce on the bottom bun. Place lettuce leaf on the sauce, then the cheese-topped patty. Add tomato slice, 2–3 pickle slices, and red onion rings to taste. Spoon another tablespoon of sauce on the top bun and close the burger. Repeat for remaining burgers.

Serve immediately while hot with fries or your preferred side.
