Beef Mixture

Render aromatics and start beef
Heat a large cast-iron skillet or heavy-bottomed sauté pan over medium-high heat. Add 1 tablespoon neutral oil. When shimmering, add diced onion and cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add minced garlic and chopped jalapeños and cook 30–45 seconds until fragrant.

Brown the beef
Add the ground beef to the pan, breaking it into pieces with a spatula. Cook without crowding so it can brown, about 6–8 minutes, stirring occasionally until no pink remains and beef has some dark browned bits.

Season and build sauce
Push beef mixture to the side and, if the pan is very dry, add a splash (1–2 teaspoons) of oil. Stir in smoked paprika, cumin, chili powder, kosher salt, and black pepper to toast briefly (10–15 seconds). Mix in tomato paste and cook 1 minute to remove raw taste. Add light brown sugar and apple cider vinegar, then pour in beef broth, scraping up the browned bits from the bottom of the pan. Stir everything together and simmer 2–3 minutes to slightly reduce and meld flavors.
Pineapple & Sauce

Add the pineapple pieces to the beef mixture and stir. If using canned pineapple, add 2 tablespoons reserved pineapple juice along with the pieces. Stir in smoky BBQ sauce and 1 teaspoon soy sauce. Reduce heat to medium-low and simmer gently 4–6 minutes, allowing pineapple to warm through and the sauce to thicken slightly. Taste and adjust seasoning: add a pinch more salt, a touch more sugar, or a squeeze of lime if desired.
Bacon & Finish

Cook bacon
While the beef simmers, in a separate skillet over medium heat, cook the 6 pieces of bacon cut into 1-inch pieces until crisp, about 6–8 minutes, stirring occasionally. Transfer bacon to a paper towel-lined plate to drain. Reserve 1 tablespoon of rendered bacon fat and discard excess or save for another use.

Combine and finish
Stir the crisp bacon pieces and 1 tablespoon reserved bacon fat into the beef and pineapple mixture. Remove pan from heat. Stir in lime juice and chopped cilantro. Taste and adjust: add more lime or a pinch of salt if needed. Sprinkle sliced green onions and toasted sesame seeds over the top just before serving.

Serve the Beef Sizzler BBQ immediately over steamed rice or spoon into warm tortillas. Offer extra sliced jalapeños or pickled jalapeños at the table for extra heat. Leftovers can be refrigerated in an airtight container for up to 3 days; reheat gently in a skillet with a splash of water or broth to loosen.
