Method
Make Quick Strawberry Syrup (if using homemade)
Prepare syrup
Combine 1 cup strawberries, 1 tablespoon sugar, and 2 tablespoons water in a small saucepan over medium heat.
Simmer gently, stirring occasionally, until strawberries break down and mixture thickens slightly, about 6–8 minutes.
Remove from heat, stir in 1 teaspoon lemon juice and let cool slightly. For a smooth syrup, strain through a fine mesh sieve, pressing solids to extract syrup. Cool to room temperature before using. Makes roughly 6 tablespoons.
Assemble Soda Base
Flavor the soda
Place 6 tablespoons strawberry syrup in a measuring cup or small pitcher. Stir in 1 teaspoon vanilla extract.
Add 2 cups chilled club soda to the syrup and gently stir once or twice to combine, keeping as much carbonation as possible. Taste and adjust: add up to 1–2 tablespoons more syrup for a sweeter/fruitier soda.
Assemble Floats
Prepare glasses
Chill 2 tall glasses in the freezer for 10 minutes if desired. This keeps the float colder longer.
Place 2 scoops of vanilla ice cream into each glass.
Slowly pour half of the strawberry-flavored soda over the ice cream in each glass, pouring down the side to reduce foaming. Leave a little room at the top for foam and garnish.
Top each float with a generous swirl of whipped cream if using.
Garnish with 3 sliced fresh strawberries and 2 mint leaves per glass.
Serve immediately with a spoon and a straw.
